Lime Shortbread

 

Cookies to welcome Spring!

For me, there’s nothing more refreshing than a dessert or cookie made with citrus.

Spring is finally here, for weeks I have surrounded myself with pastel colors, yellow flowers, and anything that screams Spring, because in a few months it will be hot. We may as well enjoy the beautiful weather while it lasts.  So here’s a pretty cookie to celebrate Spring.  Enjoy!

 

Ingredients:

 

  • 1 cup unsalted butter, softened
  • 1/2 cup confectioners’ sugar
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla
  • 1 tablespoon lime zest
  • 1/8 teaspoon salt
  • 2 cups all purpose flour

You’ll also need:

  • Two baking sheets lined with parchment paper
  • Spring nonpareils

 

Beat butter and confectioners’ sugar with an electric mixer until creamy.  Add lime juice, vanilla, lime zest and salt.  Beat well, scraping down the side of the bowl.  Add flour and beat for about 1 minute.

Turn out dough and wrap in plastic.  Refrigerate until firm, about 1 hour.

Preheat oven to 350° F.  Shape mixture into 1/2-, 3/4- inch balls.    Roll balls in nonpareils.    Place balls on baking sheet, using your fingers gently press into cookie to flatten.  Bake 10 to 15 minutes or until bottoms of cookies are light brown.  Let cool completely on a wire rack.

 

Makes about 2 1/2 dozen small cookies
