Halibut Sandwich

Here’s another easy recipe for either lunch or dinner.  A fish sandwich you can put together with just a few ingredients and in less than 30 minutes.

 

 Ingredients:

  • Four halibut steaks (about 6 ounces each)
  • Four sandwich rolls
  • 1 tablespoon ancho chili powder
  • Salt and ground pepper
  • 3 tablespoons olive oil
  • Red onion & tomatoes (optional)

 

Pour the olive oil into a small bowl and add and mix the ancho chile powder and a pinch of salt and ground pepper. Pour the marinade over the fish. Allow to marinate for 20 minutes in the refrigerator.

Heat a nonstick sauté pan over medium-high heat. Remove the fish from the marinade and place in the hot pan (there is no need to add more oil). Cook the fish for 4 minutes undisturbed, then turn over, and cook for another 2 minutes or until fish can be easily flaked with a fork.  Remove the pan.

You can also grill steaks for 3 to 4 minutes on each side or to desired doneness.

Assemble sandwiches with sliced red onions and tomatoes.
